How to care for an olive wood handle –
the complete guide

Olive wood is the most beautiful handle material for knives – and the one that needs the most care. With the right maintenance your handle will look even better after years than on day one.

You have bought a knife with an olive wood handle – or you are planning to. Good choice. Olive wood is one of the densest and most resilient woods for knife handles. It is warm in the hand, has a natural grain that makes every piece unique, and darkens and improves with age. But it does need some care.

Why does olive wood need care?

Wood is a living material – even when processed. It responds to moisture and dryness: too dry and small cracks can appear, constantly wet and it swells and loses its shape. Oiling seals the wood fibres, protects against water and food penetration, and preserves the natural elasticity of the wood.

Step by step: how to care for your olive wood handle

Dry the knife thoroughly
Before oiling, the handle must be completely dry. After washing, dry immediately with a cloth and let it air briefly.

Apply oil thinly
Put a small drop of oil on a soft cloth (not paper). Rub the handle in circular movements – thin, even, everywhere. No pool of oil sitting on the wood.

Leave to absorb
Wait 10–15 minutes. The wood draws in the oil. With linseed oil allow 24 hours.

Wipe off all excess
Important: wipe off all remaining oil with a clean cloth. An oily handle is slippery and dangerous. The wood should show a matt, silky sheen – not gloss.

Which oil is best for olive wood?

Oil Rating Notes
Linseed oil (cold-pressed) ★★★ Best choice Polymerises and forms a protective layer. 24h drying time. Wet the cloth immediately after use (self-ignition risk!)
Mineral oil / baby oil ★★★ Excellent Does not go rancid, food-safe, easy to use. Ideal for regular care.
Cutting board oil ★★★ Excellent Specifically developed for food contact. Highly recommended.
Olive oil, rapeseed oil ★★ Acceptable Works short-term, can go slightly rancid over months.
Coconut oil ★★ Acceptable Solidifies in cold, otherwise usable.
Standard cooking oil ★ Not recommended Can go rancid over time and develop an unpleasant smell.

How often should I oil?

Rule of thumb: once a month with normal use. If the wood starts to look pale and rough – oil immediately. Brand new knife: oil once when you first receive it.

What I must never do

Never in the dishwasher! The combination of heat (55–70°C), steam and aggressive detergents permanently damages olive wood – the handle swells, cracks and separates from the blade. One mistake = irreparable damage.
  • Do not soak or store permanently damp
  • Do not leave in direct sunlight or next to a radiator
  • Do not scrub with steel wool or abrasive cleaner
  • Do not treat with aggressive cleaners (neat vinegar, lemon juice)
